ZUCCHINI BOATS

Let's face it, summer is about to sail away. WAHHHH!!! Let's grab it while its still blessing us with its sunny presence however we can! These veggie boats make the most of those zucchinis that are taking over the garden about now! Maybe we can figure out how to sail off into the sunset on them!

2 large zucchinis, sliced in half

1 cup cooked couscous

½ onion, diced

1 carrot, diced

1 Tbs. butter

1 Tbs. chopped herbs (basil, mint, or whatever you like!)

¼ cup crumbled feta cheese

salt and pepper

cocktail umbrellas or sails made with toothpicks and paper

 

1. Preheat oven to 350°. 2. Using a paring knife and a spoon, scoop out centers of zucchini to make them into boats. Dice what you scoop out and set aside.

3. Put boats on baking pan and bake for 15-20 minutes until a fork pierces the squash easily. 4. Meanwhile, melt butter in pan and add onion. Cook until translucent, and then add carrots and zucchini center and cook for a few minutes. Add the cooked cous cous and heat until warm. 5. Remove from heat and add herbs and feta. 6. Scoop into center of your boats. Insert umbrellas or sails. Sail boats into your mouth! Makes 4 boats.

 

 

Let's Go Swimming!!

One of the best things to do in the summer is to go swimming! I spend A LOT of time every summer searching and plotting for a pool to hop in! Maybe after a particularly fun swim, you could make this soup. While enjoying it, think about the fun swim you had!

Swimming Pool Soup

1 avocado, peeled, pitted and in pieces

1 cucumber, seeded and chopped roughly

½ cup low-fat buttermilk

1 garlic clove

1 Tbs. lemon juice

salt and pepper

for pool floaties: an additional cucumber

 

1. Put avocado, cucumber, buttermilk, garlic, lemon and salt and pepper to taste in blender and blend until smooth. 2. Pour soup into two bowls. 3. To make floaties for your pools cut some large rectangular slices out of your cucumber for rafts. Cut small rectangles for pillows for your rafts. 4. Cut some circular slices out of your cucumber with wholes in the center for inner tubes. 5. Place floaties in your pools. Makes two swimming pools.

 

 

Mint Chocolate Chimp!

This summer I have been writing some fun recipes using Breyers ice cream. Breyers makes an excellent and tasty art supply!!! I would like to share with you who is on my kitchen counter right now! My young pal, Ivy K. helped me with this recipe! THANKS IVY!

Mint Chocolate Chimp

1 serving

2   chocolate sandwich cookies or chocolate wafer cookies

Red   decorating icing

Black   decorating icing

1 (1/2   cup) scoop Breyers® Mint Chocolate Chip Ice Cream

2 small   round candies

Cut 1 cookie in half; set aside.

Using red decorating icing, draw a mouth on the lower half of other cookie. Using black decorating icing, draw 2 nostrils on top half of same cookie.

Place Breyers® Mint Chocolate Chip Ice Cream scoop on plate. Place reserved cookie halves on top sides of ice cream to make ears.

Place whole cookie on lower half of ice cream to make face. Place round candies above cookie and add 2 dots black decorating icing to make eyes.

Serve immediately or freeze until ready to eat.
