I love sweet potatoes. I love cashews. I love bears. I put them all together in this fall/winter recipe! Perhaps these paws are padding to a nice cozy cave for hibernation about now! Slice a sweet potato lengthwise (skin on). Brush with olive oil and sprinkle with salt and pepper and roast in the oven for 20-25 mins (until golden brown). Remove from oven. Place two slices on a plate and insert whole roasted cashews in one end as the bear's claws! Awww now how about that for a beary nice side dish!?
