The bunny I saw...as bread!

 

I saw a bunny nibbling on some grass this evening. Those ears make my heart jump! I am going to toast the moment by making bread in that bunny's likeness!

 

Bunny Bread

      1 cup sugar                                1 egg

1 cup all-purpose flour               1 tsp vanilla

1/2 cup whole wheat flour          1 cup shredded carrot

1 teaspoon baking powder         1/4 chopped walnuts

1 teaspoon baking soda             1 whole carrot

1 teaspoon salt                           2 raisins

1 teaspoon ground cinnamon     2 big shavings or pieces of coconut

3/4 cup unsweetened applesauce

 

1. Preheat oven to 350°. Grease and flour a loaf pan. In a bowl, combine the sugar, flours, baking powder, baking soda, salt, and cinnamon. 2. In another bowl, combine the applesauce, egg, and vanilla. 3. Stir wet ingredients into dry ingredients until just moistened. Fold in carrots and walnuts. 4. Pour into pan. Bake for 50-55 minutes or until a toothpick inserted in center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.  Let cool. 5. Before serving, cut whole carrot in half, length-wise. Insert pieces into front third of loaf for bunny’s ears. 6. Stick two raisins on top for eyes. Stick coconut pieces into edge of bread for bunny’s teeth.
