Apple (muffin) for the Teacher!

Its that time of year again. Let's make a good impression up front, and bring an apple muffin to your new teacher. or maybe you need to bring one to your boss after that extra beach week you took! Or maybe you just need to make them for yourself so you can focus and get organized this fall!   

4 cups diced apple

1 cup sugar

2 eggs, beaten l


½ cup canola oil

2 teaspoons vanilla extract

2 cups all-purpose flour

2 teaspoons baking soda

2 teaspoons cinnamon

1 teaspoon salt

1 cup raisins

1 cup broken walnuts (optional)


1. Preheat oven to 325°. Grease 16 muffin tins. 2. Put 3 mixing bowls on the counter. Mix the apples and sugar in one bowl. Put the eggs, oil, and vanilla in the second bowl and stir. In the third bowl, put the flour, baking soda, cinnamon, and salt, and stir with a fork. 3. Stir the egg mixture into the apple mixture. 4. Sprinkle the flour mixture over the apple mixture. Wash your hands very well and use them (fun!) or get a big strong spoon to mix up the batter. Sprinkle the raisins and walnuts on top and mix. 5. Spoon into muffin tins. 6. Bake for about 25 minutes, or until a straw comes out clean when inserted into the center of a muffin.
