Super Superbowl!

Here it comes...the big ole football game of the year! THE SUPERBOWL is this Sunday, February 2nd. It is also Groundhogs Day and it is the beginning of the Year of the Horse and it is during Mardi Gras season so there is A LOT going on, but let's focus on the football here. How about serving a Football Meatloaf? Awww come on...do it!

FOOTBALL MEATLOAF

2 lbs. ground turkey (dark meat)

1 cup bread crumbs

1/3 cup milk

2 cloves garlic, minced

2 eggs

1 teaspoon salt

½ teaspoon black pepper

sauce:

½ cup yellow mustard

¾ cup ketchup

1 Tbs. Brown sugar

1 white onion cut in half and sliced

 1. Preheat oven to 375°. Place a piece of tinfoil on a rimmed baking sheet. 2. Mix all ingredients (except for sauce ingredients) together in a large mixing bowl using your very clean hands. 3. Move mixture to the baking sheet and mold into a football shape. 4. Mix sauce ingredients together and pour on top of football, using a spatula to cover the ball. 5. Bake in oven for 1 hour 15 minutes. 6. Remove from oven and let sit for 5 minutes. Carefully transfer football to serving dish and place onion slices on the football in a stitching pattern. Go team!
